We’ve got a soft spot for our Golden Enoki. It was foraged from Alexandra Park, which is only a few minutes from the Farm! We walk through it regularly and couldn’t have been more excited to be told by our friends at The Brewing Brothers (our local pub, their pizzas are undeniably the best) where there was some native Enoki ( Velvet Shank ) growing. We foraged a few of the mushrooms, did some magic-science and lots of growing and performance trials… 6 months later you can grow our natively foraged Golden Enoki in your own home.
We couldn’t be more excited to offer a natively foraged species Grow Kit, it combines everything we love about having a mushroom farm… foraging, getting into the nitty gritty science of cloning the mycelium, experimenting and assessing the fruiting of the mycelium, harvesting the mushrooms, doing lots of taste tests and finally and supplying them to local chefs, greengrocers, farm shops and creating native Grow Kits. We do it all, from Petri dish to plate.
The Golden Enoki is easy to grow, you should have your first harvest in three weeks. Like all our kits, you can re-soak the block for a second and even third harvest.
They have almost an aromatic fruity flavour, slightly sweet with notes of apricot. They’re beautiful to grow, when they start growing they look like a slightly strange collection of orange button mushrooms, these quickly flourish and unfurl into very pretty orange frilly caps, with deep cream gills. They’re almost too pretty to eat!
Use them as you would any Enoki, perfect for ramen or risotto.
